My Every Day Salsa Verde

This salsa verde recipe is guaranteed to spice up your dinner!

Here's how to make it:

• 1 tin of tomatillos
     If you can get fresh tomatillos, go for it. You'll need about a      pound.
• 2 jalapeƱos
• 1 clove of garlic
    Don't worry about finely mincing this as it will be blended. I usually cut them in half.
• 1 onion, quartered.
• 1 tbs cooking oil.
    You can also use olive oil but I don't like the flavor it adds to my salsa.
• A pinch of cilantro (or coriander)
• 2 cups of water.
• Some salt & pepper to taste

I have a secret ingredient that I like to add to my salsa; romaine lettuce! However you want to keep this aside for now.

Here's how to do it;

This is a very simple recipe; I like to start off by chopping my ingredients and putting them into a pot with two cups of water and bring it to a boil.
Once the ingredients have softened; I usually strain some of the water out. Don't worry the tomatillos will contribute to the water content. I usually strain out about 1/4 of the water out and place the rest into a blender or use a hand blender directly in my pot.
This is the part where I add my lettuce, I am not entirely sure why we add lettuce but it works. It adds a slight bitterness and helps with the water content.

This salsa is pretty universal; you can use it on virtually everything. I love to add it into a melty cheesy quesadilla.
